Tasting Notes

Once again there is just a whiff of the exotic to the more elegantly layered and cool nose that offers up aromas of lemon peel, acacia blossom and spiced pear. There is a really lovely texture to the notably concentrated and extract-rich flavors where the extract coats the palate and buffers the moderately firm acid spine shaping the saline and mineral-inflected finale. While this beauty should be approachable sooner than is typical for Chevalier, it will still need at least 3 to 4 years first. Note: from a .27 ha parcel
