The 2018 Trouble With Dreams has a pale lemon-straw colour in the glass. On the nose, it is bright and lively, with ripe citrus, candied apple and hints of fleshy pears - there is a subtle autolytic bready note, but the primary, tightly wound fruit is the focus here. This follows on the palate, which has a fine, persistent mousse and tangy high acidity. Tones of apple blossom, white peach and sherbet give the wine real energy, balancing freshness and ripeness. Fine and long to the finish, it unfurls gently in the glass with air, suggesting it will only improve with an extra year or two in bottle. 60% Chardonnay, 40% Pinot Noir.
