The Lion's Tooth name comes from the predominant weed in the vineyard - the Dandelion. It is at an altitude of 1000ft and is planted on limestone bedrock. There is a very noticeable mineral/stony element to the nose, one might say it is almost Chablisienne in character. On the palate it has more generosity and viscosity than most Chablis might but the mineral backbone is present throughout. There is real tension here, yet there is viscosity and a huge amount of complexity as well as ample fruit, all nicely marshalled by the acidity and linear structure. Absolutely delicious. Just 150 doz, 13.5%.
Biodynamic Chardonnay from high density, low-yielding vines on limestone bedrock. This has a real Chablis-like urgency on the nose and palate, with bright, zesty lemon and stone fruit flavours bound by laser-like acidity. Fermented and matured in clay amphoras and old-wood casks. Drink 2019-2028
