Aromas of beeswax, crisp yellow orchard fruit, waxy citrus rind and bread dough introduce the 2019 Chablis 1er Cru Vaillons, a medium to full-bodied, supple and satiny wine that's open and charming, concluding with a delicately saline finish. This will drink well young.
This 1er cru is located in the village of Chablis and has a clay soil. This wine comes from a single plot located at the top of the Premier Cru Vaillons called Les Beugnons. It was vinified entirely in horizontal stainless steel tank. The fermentations ended at the beginning of December. It was then aged on lees in tank. Bright lemon in colour with a ripe nose of lemon oil, pear and a light stony character in the background. The palate is fleshy and quite full for Chablis, showing pear and peach balanced by fresh lemon and lime. Succulent and rounded, the Chablis character builds towards a finish that is stony, pithy and lightly creamy. This is approachable, rounded and fine.
