Seemingly fully mature, Michel and Dany Rolland's seductive 2000 Bon Pasteur reveals a dark garnet/plum color along with a big, sweet kiss of soy, cedar, roasted herbs, blackberries, caramelized black cherries, and hints of smoke and kirsch. This fleshy, full-bodied Pomerol reveals low acidity, a savory, broad mid-palate, and a decade of life ahead of it.
Undeniably the finest Bon Pasteur since both the 1998 and 1982, the 2000 exhibits notes of roasted herbs, creme de cassis, cherry liqueur, new oak, and mocha. Powerful and intense, with moderately high tannin, a layered mid-palate, beautiful sweetness and well-integrated wood, this low acid, large-scaled effort is a brilliant wine from a terroir that can only produce wines of such quality because of the talents and efforts of the proprietors. It is not surprising that Michel Rolland, the world's most renowned oenologist, and in my opinion, its best, can take a good terroir in Pomerol and produce wines that are as stunning as those from the finest sectors. A big, muscular effort, Rolland's 2000 Bon Pasteur will be quite long-lived. A deep, saturated purple color is accompanied by sumptuous aromas of mocha, truffles, prunes, blackberries, and cassis with pain grille added for extra complexity. Medium to full-bodied, structured, powerful, and tannic, it will require 3-5 years of cellaring. Made in a vin de garde style, it will keep for two decades.
