The eponymous Jable de Tao cuvée is a blend from multiple sites across Lanzarote. Each site has different soil types and therefore a very different character - sandy, volcanic, limestone - and they are between 50 and a staggering 200 years old. All these plots combine to create a fresh, juicy wine that has minerality in spades and a lovely, mouth-coating texture. 11,000 bottles have been made and it is a delicious blend of Malvasia Volcanica, Listan Blanco, Diego and Listan Negro. Beautiful now.
