Made from 100% Listan Blanco in the crater of the Chupadero volcano (one of 100+ volcanoes in Lanzarote), the vineyard has to be seen to be believed. The 75+ year old vines are planted in 5m deep, 15m in diameter holes in the iron/magnesium-rich soils of the volcano. On the nose, this wine has struck match, grapefruit and a saline minerality. On the palate, it opens with a rich, creamy texture but quickly tapers down to a mineral-laden, lemon-peel dominated character. The whole bunches are fermented in concrete eggs after a low-pressure press. This is exactly how one would imagine a volcanic wine should taste. Delicious now (and delightfully enjoyable at just 11% alcohol), it should keep nicely - at least for up to 5 years. 800 bottles made.
