I revisited Dhondt's 2015 Extra-Brut Premier Cru Le Mont de Fer Rosé on several occasions in early 2021, and I clearly underrated it last year. Wafting from the glass with scents of sweet red berries, mandarin, bergamot, spices and peonies, it's full-bodied, vinous and elegantly fleshy, with lively acids and a long, intensely sapid finish. This is a beautiful bottle, and I can attest to the fact that it tends to empty all too quickly. It's also something of a unicorn, as Dhondt has since ripped up this parcel with the ambition of replanting with Burgundian Pinot Noir massal selections and producing a top Côteaux Champenois.
