There is even better Chablis typicity as well as a bit more elegance to the cool, pure and airy aromas of oyster shell, lemon rind and apple. The seductively textured medium-bodied flavors possess a caressing mouth feel though the firm acid spine makes it clear that this should have no trouble aging well. This is an excellent Chablis villages.
The 2017 Chablis is simply superb and about as fine an example of the appellation as it's possible to find. Offering up aromas of white currants, citrus oil, spring flowers and oyster shell, it's medium to full-bodied, satiny and layered, with superb concentration and cut, concluding with a long and lingering finish. Dauvissat explained that most of the vines that produce this cuvée face his holdings in La Fôret.
Aromas of citrus oil, white peach, spring flowers and oystershell introduce the 2017 Chablis Villages, a deep, medium to full-bodied wine with a taut, concentrated core, underpinned by a racy line of acidity. Long and chalky on the finish, like its Petit Chablis sibling, it's as good a representation of the appellation as it's possible to find.
