Baumé 1°, volatile acidity 1.17 g/l, TA 11.5 g/l, pH 3.21, total extract 86 g/l. Pale tawny. Lots of salty life and brine with almost painful acidity. Very dry finish. Long and rusty nail-like but awfully compelling. A bit dry on the end but fine. (Drink between 2010-2040)
RS 52 g/l. Mid-deep amber, with some opaqueness of sediment, and a broad, olive rim. Mellow, old leather, smoky tones, walnut skin, caramel and preserve lemon peels. Vibrant acidity, off-dry sweetness, with cooked citrus, caramel, walnut skin, smoky spice and some saltiness. Some warmth on the finish, but lovely, citrussy length and great freshness. Fine. Wow this sings out the glass and soars on the palate. An invigoratingly, piercingly fresh nose and palate reveals iodine, kelp and sea spray. With its bracing backbone of acidity there’s no shortage of power or animation – it’s rather like being slapped in the face by an ocean wave! Resoundingly. A tightly-wound nutty finish sprints into the far distance, showing a clean pair of heels on a very pure, mineral, firm finish. Terrific! Or, as Rui Falcão would say, bottled electricity.
