Aromas of lemon oil, white flowers, peach pit and wet stones introduce the 2017 Chablis 1er Cru Vaillons, a medium to full-bodied, elegantly glossy wine with lovely cut and chalky tension, concluding with a pure and stony finish. Hailing from vines in the lieu-dit of Minots, it's a lovely Chablis from Jean-Marie Guffens and his able team. Drink 2018-2027.
Bright fresh the nose has a citrus mix the palate starts with mineral and apple. A touch of sweetness in the middle a touch of pear but at the back fresh fruits and mineral give a racy freshness. 2019-24
The grapes for this wine were sourced from a single plot located at the top of the Premier Cru Vaillons appellation called "Beugnons". It was vinified and aged entirely in horizontal stainless steel tanks before bottling under screwcap. Flinty citrus and green fruits on the nose, with a buttery undertone that adds to the generosity here. The palate is cool and steely, with zippy acidity lining the citrus and green apple fruit. Through the mid palate waves of cream and butter add to the weight, rounding out the finish which is long and subtle.
