Tasting Notes

Golden colour. A clearly evolved nose of white field mushroom duxelles and white miso is backed by chalk and edged with candied lemon. The palate has a soft but still absolutely lively mousse that emphasises the wonderfully fresh, vibrant, bright notes of both candied and fresh lemon peel. The body is concentrated and seems to have an energetic, almost urgent core with that ripe, expressive lemon bubbling to the surface. The finish is of serene, lemon-scented chalk. While the nose is evolved, the palate is very lively, irrepressible in fact. The finish is long and absolutely lemon-focused. Tasted from magnum. (Drink between 2023-2028)
