The current relese of ZODO is formed around the 2017 vintage, with small additions of 2009 and 2011 from bottle at disgorgement. It is vinified half in steel and half in oak barrel, has zero dosage and does not go through malolactic fermentation. Just 2,000 bottles made. Bright straw in the glass, it has a leesy, savoury richness but is tingling with green apple and lime aromat. The palate shows notes of apple cream, toasted cereals and hints of apple pastries. Dry with a steely acid tang, there is impressive breadth to the fruit - it is no mean feat to make a zero dosage sparkling in England's cooler climate. Racy, bright and zesty to the finish.
