The 2021 Chablis Blanchots Grand Cru has the most "classic" or what you might call "old school" bouquets amongst Raveneau's 2021s and I love it: razor-sharp, struck flint and granite scents. The palate is very taut on the entry, linear, a vertical Chablis that feels very long with a saline finish that lingers in the mouth. What a superb Blanchots - one for Chablis purists.
The 2021 Blanchot is every bit as refined and promising as the Valmur. The nose offers up a beautiful blend of pear, golden delicious apple, lemon blossoms, limestone minerality, beeswax, a touch of anise, a whisper of vanillin oak and a topnote of lemon zest. On the palate the wine is pure, full-bodied and shows off excellent depth at the core, with fine soil signature, vibrant acids and great length and grip on the well-balanced and complex finish. 2028-2075.
A more elegant if more restrained nose reluctantly offers up its aromas of markedly citrus-infused Granny Smith apples, mineral reduction and oyster shell that are trimmed in subtle wood toast. There is laser-like delineation to the intensely stony medium weight flavors that culminate in a palate staining, youthfully austere and equally persistent finish. While this could use more depth, this is beauty is so packed with upside development potential that more will almost assuredly develop.
