Disgorged in February 2020 with three grams per liter dosage, Doyard's 2015 Extra-Brut Grand Cru Millésimé Œil de Perdrix mingles notes of pear, white flowers and peach with hints of plums, sweet red berries and toasted almonds. Full-bodied, layered and vinous, with a deep and concentrated core structured around lively acids and superb structuring dry extract, it's complemented by a pillowy mousse.
