This is the dry white wine of Château Margaux, made from 100% Sauvignon Blanc. Less than 1,000 cases are produced annually. Recently the bottle has changed to dark glass in order to aid the ageing and stability of the wine.

This is a really serious white. Vibrant and tangy with fantastic energy. Plenty of lime zest, pineapple, crushed stone, cedar, anise and white lavender. Grapefruit, too. Medium body. So much tension at the end. Focused and precise and it just keeps on going. The pH is 3.04, yet it has intense ripeness. A masterpiece of sauvignon blanc. The chateau says it is the best Pavillon Blanc ever. 100% sauvignon blanc.
The 2021 Pavillon Blanc du Chateau Margaux sings of lemongrass, lime leaves, orange blossoms, and sea spray, followed by nuances of elderflowers and paraffin wax. The light to medium-bodied palate delivers super-intense notes of tightly wound citrus and mineral layers coupled with a racy backbone and incredible length. This should age very well!
Fresh acidities, higher than the last few years. It has a lot in common with the brilliant 2017, but is a little more intense in its cut grass and steel notes, without the exotic fruits you can find in a riper year. Instead this majors on white peaches, pear, quince, grated ginger, lemongrass. Clear persistency and one of the wines of the vintage. Harvest September 7 to 13, 52% of overall production in this wine.
The 2021 Pavillon Blanc is likely to be remembered as a reference-point vintage for the new racy, incisive style that Château Margaux has favored with this cuvée for several years now. Wafting from the glass with notes of lime, pink grapefruit and pear mingled with white flowers, green almond and mint, it's medium-bodied, bright and racy, with tangy acids and a penetrating, saline finish. Drink 2025-2035.
The yield this year is just 18 hl/ha. 100% Sauvignon Blanc coming in at 13.3% abv. Production will be 11,000 bottles. 25% new oak, one third aged in demi-muids. Pale lemon in colour. Explosive on the nose, bursting with grapefruit, pear, passion flower, mandarin and struck flint; there is a measured smokiness from well chosen oak. The palate is initially succulent and fleshy with peach and pear fruit on the attack before a streak of vibrant acidity cuts through the ripest elements of the fruit core. Layered, dense and very complex already, this is full of energy and perfectly balanced. Intense and very long on the finish with acacia, tangy citrus and savoury spices. This is certainly a candidate for the best white Bordeaux of 2021.

Drink 2024 – 2036
The 2021 Pavillon Blanc is one of the finest recent vintages of this cuvée, combining complete maturity with incisive acids to striking effect. Offering up aromas of confit lemon, citrus zest, crisp orchard fruit and wet stones, it's medium to full-bodied, chiseled and tensile, with striking concentration and chalky structuring dry extract, concluding with a long, mineral finish. It was picked between September 7 and 13 and attained 13.3% natural alcohol.
The 2021 Pavillon Blanc du Chateau Margaux is 100% Sauvignon Blanc, picked between 7 and 13 September. Notes of fresh lemon juice, grapefruit, and lime zest jump from the nose, followed by hints of sea spray, chalk dust, white pepper, and yuzu. Medium-bodied, the palate quivers with tension and zing, delivering intense citrus layers with a satiny texture and a long steely finish. This should age incredibly well! The acidity is higher than in previous vintages, with a pH of 3.04.
