The palate is pure and mineral, pairing savoury and lightly bready notes with a slight fleshy roundness that brings hints of lemon curd and white stone fruit. This builds through the mid palate, with a creamy but delicate mousse adding textural breadth whilst retaining such poise and fleet-footed freshness. Zippy and lifted on a long finish.
